Quick and Easy Chickpea Salad

This salad reminds me of home.  Our refrigerator was always filled with various salads and dips of a Mediterranean variety.  This is also the EASIEST recipe ever!

Chickpea Salad

Quick and Easy Chickpea Salad

1 can chickpeas (I use Goya low sodium)

juice of 1 lemon

1/4 teaspoon garlic powder

1 Tablespoon parsley (dried or fresh)

pinch salt

Combine all ingredients in a bowl.  Mix.  Refrigerate and serve!

Seriously, could there be an easier recipe?  This salad tastes much better after it has spent the night in the fridge, but I always eat a few spoonfuls while I’m making it.  You know, to make sure it tastes right…

Eat it on its own, as a side dish, or over some lettuce or spinach for lunch.
